Savor the rich, savory flavors of Jjajangmyeon, a beloved Korean noodle dish featuring tender pork, earthy black bean paste, and fresh vegetables. Perfect for a cozy weeknight dinner that warms the soul.

Ingredients

  • 200 g pork belly or pork shoulder, diced
  • 1 cup black bean paste (Chunjang)
  • 1 medium onion, chopped
  • 1 medium zucchini, diced
  • 1 medium potato, diced
  • 2 tablespoons vegetable oil
  • 4 cups water or chicken broth
  • 400 g noodles (wheat noodles or udon)

Method

  1. 1

Heat vegetable oil in a large pan over medium heat.

  2. 2

Add the diced pork and cook until browned.

  3. 3

Stir in the chopped onion, zucchini, and potato. Cook until the vegetables are softened.

  4. 4

Add the black bean paste and stir well to combine, cooking for 2-3 minutes.

  5. 5

Pour in the water or chicken broth, bring to a boil, then reduce heat and simmer for 15 minutes.

  6. 6

While the sauce simmers, cook the noodles according to package instructions. Drain and set aside.

  7. 7

Serve the noodles topped with the jjajang sauce. Mix well before eating.

  8. 8

Garnish with sliced cucumber or green onions if desired.
