Savor the rich, hearty flavors of Jitrnice, a traditional Czech sausage made with tender pork shoulder and liver, seasoned with aromatic marjoram. Perfect for a cozy family dinner or a festive gathering.

- 500 g pork shoulder
- 200 g pork liver
- 100 g onion
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp marjoram
- 100 ml water
- 2 m hog casings

In a large bowl, combine the pork shoulder, pork liver, onion, salt, black pepper, and marjoram.

Add the water to the meat mixture and mix well until all ingredients are thoroughly combined.

Carefully fill the soaked hog casings with the meat mixture, making sure not to overfill them.

Tie off the ends of the casings to prevent the filling from escaping.

Bring a large pot of water to a boil, then reduce to a simmer. Gently place the jitrnice into the simmering water.

Cook for about 30-40 minutes, or until the jitrnice are firm and cooked through.

Remove the jitrnice from the pot and let them cool slightly before slicing.
