Indulge in the sweet, crispy delight of Jelabi, a popular Indian treat made from a simple batter infused with cardamom. Perfect for festive occasions or as a delightful dessert to share with loved ones.

- 1 cup water
- 1 teaspoon yeast
- 1 teaspoon sugar
- 1 teaspoon cardamom powder
- 1 cup sugar
- 1 cup water

In a bowl, mix the flour, sugar, and yeast. Gradually add water to form a smooth batter.

Cover the bowl with a cloth and let it rise for about 15-20 minutes in a warm place.

While the batter is rising, prepare the syrup by combining sugar and water in a saucepan. Heat until sugar dissolves, then add cardamom powder. Simmer for 5 minutes.

Heat oil in a deep frying pan over medium heat. Once hot, use a piping bag or a squeeze bottle to pipe the batter into the oil in spiral shapes.

Fry until golden brown on both sides, then remove and drain excess oil on paper towels.
