Savor the vibrant flavors of Korea with this delightful Japchae, a stir-fried noodle dish featuring sweet potato noodles, fresh vegetables, and a hint of sesame. Perfect for a cozy weeknight dinner or a festive gathering.

Ingredients

  • 200 grams sweet potato noodles
  • 1 cup spinach
  • 1 cup carrots
  • 1 cup bell pepper
  • 1 cup shiitake mushrooms
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds

Method

    Soak the sweet potato noodles in warm water for about 30 minutes or until they become soft.

    While the noodles are soaking, prepare the vegetables: julienne the carrots, bell pepper, and slice the shiitake mushrooms.

    In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the carrots and cook for about 2-3 minutes until they are slightly softened.

    Add the bell pepper and mushrooms to the skillet and stir-fry for an additional 3-4 minutes. Then add the spinach and stir-fry for another minute until wilted.

    Drain the soaked noodles and add them to the skillet. Pour in the soy sauce and sesame oil, and toss everything together to combine well. Cook for another 5-7 minutes, stirring occasionally.

    Remove from heat and sprinkle with sesame seeds before serving. Enjoy warm or at room temperature.
