- 200 grams sweet potato noodles
- 1 cup spinach
- 1 cup carrots
- 1 cup bell pepper
- 1 cup shiitake mushrooms
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon sesame seeds

Soak the sweet potato noodles in warm water for about 30 minutes or until they become soft.

While the noodles are soaking, prepare the vegetables: julienne the carrots, bell pepper, and slice the shiitake mushrooms.

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the carrots and cook for about 2-3 minutes until they are slightly softened.

Add the bell pepper and mushrooms to the skillet and stir-fry for an additional 3-4 minutes. Then add the spinach and stir-fry for another minute until wilted.
