Indulge in the sweet, crispy delight of jalebi, a beloved Indian treat made from fermented batter and soaked in fragrant sugar syrup. Perfect for festive occasions or a cozy dessert after dinner.

- 1 cup all-purpose flour
- 1 cup water
- 1 teaspoon yogurt
- 1 cup sugar
- 1 cup water
- 1 teaspoon cardamom powder
- 2 cups ghee or oil
- a pinch saffron strands optional
Method

In a bowl, mix the all-purpose flour, yogurt, and water to form a smooth batter. Let it rest for 10 minutes.

In a saucepan, combine the sugar and water for the syrup. Bring to a boil and add cardamom powder. Cook for 5-7 minutes until slightly thickened.

Heat ghee or oil in a deep frying pan over medium heat.

Pour the batter into a squeeze bottle or piping bag. Squeeze the batter into circular shapes in the hot oil, forming spirals.

Fry the jalebis until golden and crispy, about 1-2 minutes on each side.

Remove the jalebis from the oil and immediately dip them into the warm sugar syrup for a few seconds, then place them on a plate.
