Indulge in Jachnun, a traditional Yemenite pastry that bakes slowly overnight for a flaky, buttery delight. Perfect for a cozy weekend brunch or a special family gathering, it pairs beautifully with fresh tomato sauce and hard-boiled eggs.

- 4 cups all-purpose flour
- 1 cup water
- 1 tsp salt
- 1 cup margarine or butter
- 1 tbsp sugar
- 1 tbsp baking powder
- 1 cup zatar spice (optional)

In a large mixing bowl, combine the flour, salt, sugar, and baking powder.

Gradually add the water and mix until the dough forms.

On a floured surface, knead the dough for about 5-10 minutes until smooth and elastic.

Divide the dough into six equal pieces. Roll each piece into a thin rectangle.

Spread a layer of softened margarine or butter over each rectangle, then sprinkle with za'atar if using.

Roll the rectangles tightly from one end to the other, forming a log shape, then coil each log into a spiral.

Place the coils in a greased baking dish, cover with a damp cloth, and let sit overnight in the refrigerator.
