Savor the vibrant flavors of this traditional South American humita, made with fresh corn, creamy feta, and a hint of sweetness. Perfect for a cozy weeknight dinner or a festive gathering with friends.

Ingredients

  • 2 cups fresh corn kernels
  • 1 cup milk
  • 1/4 cup butter
  • 1 cup feta cheese
  • 1 cup cornmeal
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup sugar
  • 8 leaves corn husks

Method

  1. 1

Soak the corn husks in warm water for about 30 minutes to soften them.

  2. 2

In a blender, combine the fresh corn kernels and milk, and blend until smooth.

  3. 3

In a large bowl, mix the corn mixture with melted butter, feta cheese, cornmeal, baking powder, salt, and sugar until well combined.

  4. 4

Take a corn husk, place a spoonful of the corn mixture in the center, fold the sides over, and secure with kitchen twine or another husk.

  5. 5

Arrange the wrapped humitas in a steamer basket and steam for about 40 minutes or until cooked through.

  6. 6

Once cooked, carefully unwrap the humitas and serve warm, optionally with a drizzle of olive oil or a sprinkle of extra cheese.

  7. 7

Enjoy your delicious homemade humitas as a snack or side dish!
