- 1 medium onion
- 2 cloves garlic
- 2 medium carrots
- 1 liter vegetable broth
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper

Rinse the soaked peas under cold water and set aside.

In a large pot, heat the olive oil over medium heat and sauté the chopped onion until translucent.

Add the minced garlic and diced carrots to the pot, and cook for another 5 minutes until the vegetables soften.

Stir in the soaked peas and pour in the vegetable broth. Bring to a boil.

Reduce heat and let it simmer for about 45 minutes, or until the peas are tender.
