Warm up with a hearty bowl of Hovězí Polévka, a traditional Czech beef soup brimming with tender brisket, vibrant carrots, and aromatic garlic. Ideal for cozy weeknight dinners or family gatherings.

- 500 grams beef (brisket or shank)
- 2 liters water
- 2 medium carrots
- 1 medium celery root
- 1 medium onion
- 3 cloves garlic
- 1 teaspoon peppercorns
- 1 teaspoon salt
- fresh parsley to taste for garnish
Method

In a large pot, add the beef chunks and cover with water. Bring to a boil.

Once boiling, skim off any foam that rises to the surface. Reduce heat to a simmer.

Add the quartered onion, garlic, whole peppercorns, and salt to the pot. Simmer for about 60 minutes, or until the beef is tender.

After 60 minutes, add the sliced carrots and diced celery root. Continue to simmer for an additional 30 minutes.

Once the vegetables are tender, taste the broth and adjust seasoning if necessary.

Remove the beef from the pot, shred it into bite-sized pieces, and return it to the pot.

Serve hot, garnished with fresh chopped parsley.
