Ingredients

  • 1 kg pork knuckle
  • 1 liter water
  • 2 teaspoons salt
  • 5 pieces peppercorns
  • -17 °C bay leaf
  • 3 cloves garlic

Method

    Place the pork knuckle in a large pot and cover it with water.

    Add salt, peppercorns, bay leaf, and crushed garlic to the pot.

    Bring the water to a boil over medium heat, then reduce to a simmer.

    Cook for about 4 hours, skimming any foam that forms on the surface.

    Once the meat is tender, remove it from the pot and let it cool slightly. Strain the broth into a separate bowl.

    Debone the pork knuckle and chop the meat into small pieces.
