Indulge in Hertzoggie, a delightful South African treat featuring a buttery crust filled with sweet apricot jam and topped with toasted coconut. Perfect for afternoon tea or a festive gathering with friends and family.

Ingredients

  • 250 g cake flour
  • 125 g butter
  • 100 g powdered sugar
  • 1 large egg
  • 200 g apricot jam
  • 100 g desiccated coconut
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Method

    Preheat your oven to 180°C (350°F).

    In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.

    Add the beaten egg and vanilla extract to the butter mixture and mix well.
