Savor the warmth of Hausa Koko, a traditional Nigerian rice porridge infused with spicy ginger and pepper, perfect for a cozy breakfast or a comforting evening snack that warms the soul.

Ingredients

  • 1 cup rice
  • 4 cups water
  • 1 cup ground pepper
  • 1 tbsp ginger paste
  • 1 tbsp sugar
  • 1 pinch salt
  • 1 cup milk

Method

    Rinse the rice under cold water until the water runs clear to remove excess starch.

    In a large pot, bring the 4 cups of water to a boil, then add the rinsed rice.

    Reduce heat to low, cover, and simmer for about 20 minutes until rice is fully cooked and tender.

    In a separate bowl, mix the ground pepper, ginger paste, sugar, and salt together.

    Once the rice is cooked, stir in the pepper mixture and continue to cook for an additional 5 minutes on low heat.
