Savor the rich flavors of North Africa with this hearty Harissa dish, featuring tender lamb or beef simmered with aromatic spices and bulgur. Perfect for a cozy weeknight dinner or a special gathering with friends.

- 1 cup cracked wheat (bulgur)
- 453.6 g lamb (or beef), cut into cubes
- 1 large onion, chopped
- 4 cups water or broth
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cumin
Method

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes.

Add the lamb (or beef) cubes to the pot, stirring frequently until browned on all sides, approximately 10 minutes.

Pour in the 4 cups of water or broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer.

Stir in the soaked cracked wheat, salt, black pepper, and cumin. Cover the pot and let it simmer for about 40-45 minutes, or until the meat is tender and the wheat has absorbed the flavors.

Check the seasoning and adjust with more salt or pepper as needed. If the Harissa is too thick, add a little more water or broth to reach your desired consistency.
