Experience the coastal charm of Hamsili Pilav, a Turkish rice dish infused with tender anchovies, aromatic onions, and a hint of lemon. Ideal for a cozy weeknight dinner that transports you to the Mediterranean.

Ingredients

  • 500 g anchovies
  • 2 cups rice
  • 4 cups water

Method

    Rinse the rice under cold water until the water runs clear. Soak the rice in warm water for about 15-20 minutes, then drain.

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.

    Add the drained rice to the skillet and sauté for another 5 minutes, stirring frequently to coat the rice with oil.

    Pour in the water, add salt and black pepper, and bring to a boil. Then, reduce the heat to low, cover, and simmer for about 15-20 minutes until the rice is cooked and the water is absorbed.

    While the rice is cooking, prepare the anchovies by layering them in a greased baking dish. Start with a layer of anchovies at the bottom, then add half of the cooked rice on top.

    Add another layer of anchovies on top of the rice, followed by the remaining rice. Finally, place another layer of anchovies on top of the rice.

    Cover the dish with aluminum foil and bake in a preheated oven at 180°C (350°F) for about 20-25 minutes.

    Remove the dish from the oven, let it cool slightly, and garnish with sliced lemon before serving.
