Experience the rich flavors of Middle Eastern cuisine with Hamam Mahshi, tender pigeon stuffed with fragrant rice and spices. This dish is perfect for a special occasion or a cozy family dinner, bringing warmth to your table.

Ingredients

  • 4 pieces pigeon
  • 1 cup rice
  • 1 large onion
  • 1 tablespoon ghee
  • 2 cups chicken broth
  • 1 teaspoon allspice
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Method

  1. 1

Rinse the rice under cold water until the water runs clear, then soak in water for about 30 minutes.

  2. 2

In a large skillet, heat the ghee over medium heat. Add the chopped onion and sauté until softened and lightly golden.

  3. 3

Drain the rice and add it to the skillet with the onions. Stir for a few minutes, then add allspice, salt, and black pepper. Mix well.

  4. 4

Stuff each pigeon with the rice mixture, packing it gently. Secure the openings with toothpicks or kitchen twine.

  5. 5

In a large pot, bring the chicken broth to a boil. Carefully place the stuffed pigeons into the pot and reduce the heat to low. Cover and simmer for about 1 hour.

  6. 6

Once cooked, remove the pigeons from the pot and let them rest for a few minutes before serving.

  7. 7

Serve the Hamam Mahshi hot, garnished with extra rice if desired, and a side of salad.
