- 4 pieces pigeon
- 1 cup rice
- 1 large onion
- 1 tablespoon ghee
- 2 cups chicken broth
- 1 teaspoon allspice
- 1 teaspoon salt
- 1 teaspoon black pepper

Rinse the rice under cold water until the water runs clear, then soak in water for about 30 minutes.

In a large skillet, heat the ghee over medium heat. Add the chopped onion and sauté until softened and lightly golden.

Drain the rice and add it to the skillet with the onions. Stir for a few minutes, then add allspice, salt, and black pepper. Mix well.

Stuff each pigeon with the rice mixture, packing it gently. Secure the openings with toothpicks or kitchen twine.

In a large pot, bring the chicken broth to a boil. Carefully place the stuffed pigeons into the pot and reduce the heat to low. Cover and simmer for about 1 hour.

Once cooked, remove the pigeons from the pot and let them rest for a few minutes before serving.
