- 1 cup semolina (sooji)
- 3/4 cup sugar
- 1/2 cup ghee
- 2 cups water
- 1/4 cup chopped nuts
- 1 teaspoon cardamom powder
- 2 cups whole wheat flour
- water as needed for kneading dough
- oil for deep frying for puris
Method

In a heavy-bottomed pan, heat the ghee on medium heat.

Add the semolina to the ghee and roast until it turns golden brown, stirring continuously.

Slowly add the water while stirring to avoid lumps. Add sugar and cardamom powder.

Cook the mixture until it thickens and leaves the sides of the pan. Add chopped nuts and mix well.

In a separate bowl, mix whole wheat flour with water to form a soft dough. Let it rest for 15 minutes.

Roll out small portions of the dough into thin circles.

Heat oil in a deep frying pan and fry the puris until they puff up and turn golden brown.

Serve the hot puris with warm halwa on the side.
