Experience the heartwarming flavors of Middle Eastern cuisine with Halim, a hearty stew of tender beef simmered with cracked wheat, aromatic spices, and rich ghee. Perfect for a cozy family dinner or a special gathering.

Ingredients

  • 1 cup wheat (cracked or whole)
  • 500 grams beef (or lamb)
  • 1 large onion
  • 1 teaspoon turmeric powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 6 cups water
  • 1 tablespoon ghee (or cooking oil)

Method

  1. 1

Soak the wheat overnight in water to soften it.

  2. 2

In a large pot, heat the ghee over medium heat and sauté the chopped onion until golden brown.

  3. 3

Add the beef (or lamb) to the pot and brown it on all sides.

  4. 4

Stir in the turmeric, salt, and black pepper, then add the soaked wheat and water.

  5. 5

Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for about 4 hours, stirring occasionally.

  6. 6

After 4 hours, the wheat should be very soft. Use a wooden spoon or a hand blender to mash the ingredients together until it reaches a porridge-like consistency.

  7. 7

Serve hot, drizzled with extra ghee and topped with fried onions or fresh herbs if desired.
