Indulge in the sweet, nutty flavors of Halawa, a traditional Middle Eastern dessert made with semolina, ghee, and a hint of rose water. Perfect for special occasions or as a delightful treat after dinner.

Ingredients

  • 1 cup semolina
  • 1 cup sugar
  • 2 cups water
  • 1/2 cup ghee or unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts
  • 1/4 cup rose water

Method

  1. 1

In a saucepan, combine water and sugar. Bring to a boil over medium heat until the sugar completely dissolves.

  2. 2

In a separate pan, melt the ghee or butter over low heat. Add the semolina and stir continuously for about 10 minutes until it turns golden brown.

  3. 3

Gradually pour the sugar syrup into the semolina while stirring continuously to avoid lumps.

  4. 4

Add the vanilla extract and rose water, mixing well until the mixture thickens into a soft dough.

  5. 5

Remove the mixture from heat and let it cool slightly before transferring it to a greased tray or mold.

  6. 6

Spread the mixture evenly and smoothen the top with a spatula. Sprinkle chopped nuts on top if desired.

  7. 7

Allow the Halawa to cool completely before cutting it into squares or diamonds.

  8. 8

Serve at room temperature and enjoy your homemade Halawa!
