Indulge in the delightful Korean treat of Gyeongdan, soft rice cakes filled with sweet red bean paste and dusted with soybean powder. Perfect for a cozy afternoon snack or a unique dessert at your next gathering.

Ingredients

  • 2 cups sweet rice flour
  • 1 cup water
  • 1/2 cup red bean paste
  • 1 cup sweetened soybean powder
  • 1/4 cup sugar
  • 1 pinch salt
  • 1 tablespoon cornstarch

Method

    In a mixing bowl, combine sweet rice flour, sugar, and salt.

    Gradually add water to the flour mixture and knead until the dough is smooth and pliable.

    Divide the dough into small balls, about the size of a golf ball.

    Flatten each ball and place about a teaspoon of red bean paste in the center, then wrap the dough around it and seal it tightly.

    Bring a pot of water to a boil. Add the prepared Gyeongdan and cook for about 10 minutes until they float to the surface.
