- 500 grams mixed wild mushrooms
- 1 medium onion
- 2 cloves garlic
- 1 liter vegetable broth
- 200 ml heavy cream
- 2 tablespoons butter
- 1 teaspoon dried thyme

Method

In a large pot, melt the butter over medium heat.

Add the chopped onion and garlic and sauté until the onion is translucent.

Add the mixed mushrooms and cook for about 10 minutes, stirring occasionally, until they are soft.

Pour in the vegetable broth and bring to a gentle boil. Reduce heat and simmer for 20 minutes.

Stir in the heavy cream and thyme (if using), and season with salt and pepper to taste. Simmer for another 5 minutes.

Serve hot, garnished with fresh herbs if desired.
