- 1 cup semolina (sooji)
- 1/4 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup water
- 1 cup chickpeas (boiled)
- 1/2 cup tamarind pulp
- 1 tsp cumin powder
- 1 tsp black salt
- 1 cup mint leaves
Method

In a bowl, mix semolina, all-purpose flour, baking soda, and salt. Gradually add water and knead to form a smooth dough.

Cover the dough with a damp cloth and let it rest for 15 minutes.

Divide the dough into small balls and roll them out into thin circles.

Heat oil in a deep pan over medium heat. Fry the rolled puris until they puff up and turn golden brown.

In a separate bowl, mix boiled chickpeas, tamarind pulp, cumin powder, black salt, and water to create the spicy water.

Serve the puris with the spicy water and garnish with mint leaves. Enjoy your Gol Gappay!
