- 1.5 cups all-purpose flour

Boil the potatoes in a large pot of salted water until tender, about 30-40 minutes. Drain and let cool slightly.

Once cool enough to handle, peel the potatoes and pass them through a potato ricer or mash until smooth.

On a clean surface, spread the potato out and create a well in the center. Add the beaten egg, salt, and gradually sprinkle the flour over the top.

Gently mix the ingredients together until a dough forms. Be careful not to overwork the dough to keep it light and fluffy.

Divide the dough into sections, rolling each section into a long rope about 1/2 inch thick. Cut the rope into 1-inch pieces.
