Indulge in the warm, flaky goodness of Gipfeli, a Swiss pastry that envelops rich butter and a hint of vanilla. Perfect for a cozy brunch or an afternoon treat with coffee, these crescent-shaped delights will charm your taste buds.

Ingredients

  • 500 g all-purpose flour
  • 250 g unsalted butter
  • 100 g sugar
  • 1 teaspoon salt
  • 200 ml milk
  • 10 g active dry yeast
  • 1 teaspoon vanilla extract
  • 1 egg beaten egg

Method

  1. 1

In a bowl, combine warm milk and yeast. Let it sit for about 10 minutes until frothy.

  2. 2

In a large mixing bowl, combine flour, sugar, and salt. Mix well.

  3. 3

Add softened butter, vanilla extract, and the yeast mixture to the flour. Mix until combined.

  4. 4

Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

  5. 5

Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place until doubled in size (about 1 hour).

  6. 6

Preheat the oven to 200°C (400°F). Roll out the dough into a large circle and cut into triangles.

  7. 7

Roll each triangle from the wide end to the tip and place on a baking sheet lined with parchment paper.

  8. 8

Brush each Gipfeli with the beaten egg and bake for 15-20 minutes or until golden brown.
