Indulge in the vibrant flavors of Gimbap, a beloved Korean dish featuring seasoned rice, fresh vegetables, and savory eggs wrapped in nori. Perfect for a quick weeknight dinner or a delightful picnic treat.

- 2 cups short-grain rice
- 1 tablespoon sesame oil
- 1 teaspoon salt
- 4 sheets nori seaweed
- 1 carrot julienned
- 2 eggs beaten
- 5 slices cucumber
- 100 grams pickled radish
Method

Cook the short-grain rice according to package instructions. Once cooked, let it cool slightly and mix in sesame oil and salt.

In a pan, add a little oil and sauté the julienned carrot until slightly softened, about 3-4 minutes. Set aside.

In the same pan, make a thin omelette with the beaten eggs. Once cooked, remove and cut into thin strips.

Lay a sheet of nori on a bamboo sushi mat. Spread a thin layer of rice over the nori, leaving about 2 inches at the top edge.

Place a line of sautéed carrots, cucumber slices, egg strips, and pickled radish across the rice.

Using the bamboo mat, roll the gimbap tightly away from you, pressing gently to ensure it holds its shape. Seal the edge with a little water.

Repeat the process with the remaining nori sheets and filling ingredients.

Slice the rolled gimbap into bite-sized pieces and serve with soy sauce or pickled ginger, if desired.
