- 1 kg beef or lamb, cubed
- 2 tablespoons vegetable oil
- 2 onions, chopped onions, chopped
- 1 cup fresh parsley, finely chopped
- 1 cup fresh cilantro, finely chopped
- 1 cup fresh fenugreek leaves, finely chopped
- 1 cup dry kidney beans, soaked overnight
- 1 tablespoon dried lime (limoo amani), pierced
- 2 teaspoons turmeric
- 1 liter water

Method

Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until golden brown.

Add the cubed beef or lamb to the pot. Sear the meat on all sides until browned.

Stir in the turmeric, and add the soaked kidney beans. Pour in the water and bring to a boil.

Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 1 hour.

Add the chopped herbs (parsley, cilantro, and fenugreek) and the dried lime. Season with salt and pepper.

Continue to simmer for another 30-60 minutes, until the meat is tender and the flavors are well combined.

Adjust seasoning if necessary, and serve hot with rice or flatbread.
