Ingredients

  • 2 cups mixed vegetables (carrots, bell peppers, zucchini, green beans)
  • 1 medium onion
  • 2 cloves garlic
  • 1 cup tomatoes
  • 1 cup rice
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Method

    In a large pot, heat the olive oil over medium heat.
