- 1 medium onion
- 2 cloves garlic
- 1 cup tomatoes
- 1 cup rice
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme

In a large pot, heat the olive oil over medium heat.

Add the chopped onion and garlic, sautéing until they become translucent.
