- 1 large leek (sliced)

- 1 bunch fresh parsley (chopped)

In a large pot, melt the butter over medium heat. Add the sliced leeks and carrots, and sauté for about 5 minutes until softened.

Add the chicken pieces to the pot and brown them for about 5-7 minutes.

Pour in the chicken broth, add the diced potatoes, and bring to a boil. Reduce the heat and let it simmer for about 30 minutes.

Once the chicken is cooked through, remove the pieces and let them cool slightly. Shred the meat from the bones.

Return the shredded chicken to the pot, then stir in the heavy cream. Let it heat through for another 10 minutes, but do not boil.
