Experience the heart of Belgium with Gentse Waterzooi, a comforting chicken stew enriched with creamy broth, tender vegetables, and fresh parsley. Ideal for cozy weeknight dinners or gatherings with loved ones.

Ingredients

  • 1 kg chicken (cut into pieces)
  • 2 tablespoons butter
  • 1 large leek (sliced)
  • 2 carrots (sliced) Ingredient 4
  • 4 cups chicken broth
  • 2 potatoes (peeled and diced) Ingredient 6
  • 1 cup heavy cream
  • 1 bunch fresh parsley (chopped)

Method

  1. 1

In a large pot, melt the butter over medium heat. Add the sliced leeks and carrots, and sauté for about 5 minutes until softened.

  2. 2

Add the chicken pieces to the pot and brown them for about 5-7 minutes.

  3. 3

Pour in the chicken broth, add the diced potatoes, and bring to a boil. Reduce the heat and let it simmer for about 30 minutes.

  4. 4

Once the chicken is cooked through, remove the pieces and let them cool slightly. Shred the meat from the bones.

  5. 5

Return the shredded chicken to the pot, then stir in the heavy cream. Let it heat through for another 10 minutes, but do not boil.

  6. 6

Season the broth with salt and pepper to taste.

  7. 7

Serve the Gentse Waterzooi hot, garnished with chopped fresh parsley.
