- 1 cup heavy cream
- 3/4 cup granulated sugar
- 1 tablespoon pure vanilla extract
- 4 large egg yolks
- 1/4 cup milk powder

In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until hot, but not boiling.

In a separate bowl, whisk together granulated sugar, egg yolks, and vanilla extract until smooth and creamy.

Gradually pour the hot milk mixture into the egg yolk mixture, whisking continuously to temper the eggs and prevent curdling.

Return the combined mixture to the saucepan. Cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 10-12 minutes).

Remove from heat and transfer the mixture to a bowl. If using, whisk in milk powder.

Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.
