Indulge in the sweet, nutty flavors of Gaz, a traditional Persian confection made with crunchy pistachios, fragrant rose water, and a hint of saffron. Perfect for sharing during festive occasions or as a delightful treat with tea.

- 2 cups sugar
- 1 cup water
- 1 cup glucose syrup
- 2 cups shelled pistachios
- 1 tablespoon rose water
- 1/4 teaspoon saffron threads
- 1/2 teaspoon citric acid
- 1 cup powdered sugar
Method

In a saucepan, combine sugar and water. Heat over medium heat, stirring until the sugar dissolves completely.

Once the sugar has dissolved, add glucose syrup. Bring the mixture to a boil, then reduce the heat and simmer for about 25-30 minutes, or until it reaches a soft ball stage (about 115°C or 240°F).

Add the soaked saffron, rose water, and citric acid to the mixture, stirring well to combine.

Remove from heat and quickly stir in the shelled pistachios. Mix until well incorporated.

Pour the mixture into a greased rectangular dish and spread it evenly. Allow it to cool at room temperature for about 1 hour.

Once cooled and set, dust the top with powdered sugar. Cut into small squares or rectangles for serving.
