- 1 kg chicken (cut into pieces)
- 3 cups rice
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 cup tomato, diced
- 1 cup green bell pepper, chopped
- 2 cups chicken broth
- 1 tablespoon Turmeric powder
- 2 tablespoons olive oil
- to taste salt and black pepper

In a large pot, heat the olive oil over medium heat. Add the chopped onions and minced garlic, sautéing until the onions are translucent.

Add the chicken pieces to the pot and season with salt and black pepper. Cook until the chicken is browned on all sides.

Stir in the diced tomatoes and green bell pepper, cooking for another 5 minutes until the vegetables soften.

Add the rice to the pot and stir well to combine with the chicken and vegetables. Sprinkle the turmeric powder over the mixture.

Pour in the chicken broth, bring to a boil, then reduce heat to low. Cover the pot and let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the broth.

Once cooked, remove from heat and let it sit, covered, for another 5 minutes. Fluff the rice with a fork before serving.
