Ingredients

  • 1 kg carrots
  • 4 cups milk
  • 1 cup sugar
  • 1/2 cup ghee
  • 1/2 cup khoya
  • 1/4 cup cashews
  • 1/4 cup raisins
  • 1 teaspoon cardamom powder

Method

    In a heavy-bottomed pan, add the grated carrots and pour in the milk. Cook on medium heat.

    Stir occasionally and bring to a boil. Let it simmer until the milk reduces and thickens, about 30-40 minutes.

    Once the milk has thickened, add ghee and sugar. Mix well and continue to cook, stirring frequently.

    Add khoya (if using), cardamom powder, chopped cashews, and raisins. Stir to combine and cook for another 10 minutes.

    When the mixture is thick and has a halwa-like consistency, remove it from heat.

    Let it cool slightly before serving. Gajar Ka Halwa can be served warm or at room temperature.
