Indulge in the warmth of Gajar Halwa, a traditional Indian dessert made with grated carrots simmered in rich milk and ghee, sweetened with sugar and spiced with cardamom. Perfect for festive occasions or a cozy evening treat.

- 1 kg fresh carrots, grated
- 1 litre full-fat milk
- 200 grams sugar
- 150 grams ghee
- 100 grams mixed nuts and raisins
- 1 teaspoon cardamom powder
Method

Peel and grate the fresh carrots using a grater or food processor.

In a heavy-bottomed pan, add the grated carrots and full-fat milk. Cook over medium heat, stirring occasionally until the milk reduces and thickens.

Once the milk has reduced, add sugar and mix well. Continue to cook until the sugar dissolves and the mixture thickens further.

Add ghee to the mixture and stir well for about 10-15 minutes until the ghee separates from the halwa.

Stir in the mixed nuts, raisins, and cardamom powder. Mix everything thoroughly and cook for an additional 5 minutes.

Remove from heat and let it cool slightly before serving.
