Experience the vibrant flavors of Thailand with Gai Yang, a succulent grilled chicken marinated in fragrant fish sauce, garlic, and cilantro. Ideal for a weekend barbecue or a festive gathering with friends.

Ingredients

  • 1 kg whole chicken
  • 3 tablespoons Thai fish sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • 2 tablespoons vegetable oil
  • 4 cloves garlic
  • 1 tablespoon ground white pepper
  • 1 tablespoon fresh cilantro

Method

  1. 1

In a large bowl, combine the fish sauce, soy sauce, sugar, vegetable oil, minced garlic, and ground white pepper to create the marinade.

  2. 2

Add the chicken pieces to the marinade and toss until well coated. Cover and let it marinate for at least 30 minutes, preferably 2 hours or overnight for best flavor.

  3. 3

Preheat your grill or barbecue to medium heat.

  4. 4

Place the marinated chicken on the grill and cook for about 15 minutes on each side, or until the internal temperature reaches 75°C (165°F) and the skin is golden brown and crispy.

  5. 5

Remove the chicken from the grill and let it rest for 5 minutes.

  6. 6

Garnish with chopped cilantro before serving.

  7. 7

Serve with sticky rice and a spicy dipping sauce for an authentic experience.
