- 200 grams green beans
- 2 medium potatoes
- 2 large carrots
- 100 grams tofu
- 4 tablespoons peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 teaspoon chili paste
- 1 cup bean sprouts

Method

Boil a pot of water and cook the diced potatoes for about 10 minutes or until tender. Drain and set aside.

In the same pot, add the sliced carrots and green beans. Cook for 3-5 minutes until just tender. Drain and set aside.

In a frying pan, heat a small amount of oil and fry the tofu cubes until golden brown. Remove and set aside.

In a bowl, mix the peanut butter, soy sauce, lime juice, and chili paste to create the dressing. Adjust the chili paste according to your heat preference.

To assemble, place the boiled potatoes, green beans, carrots, and bean sprouts on a serving plate. Add the fried tofu on top.

Drizzle the peanut dressing generously over the salad and garnish with sliced hard-boiled eggs and fried shallots.
