Savor the vibrant flavors of this Middle Eastern Ful, a hearty dish made with creamy fava beans, aromatic garlic, and a hint of lemon. Perfect for a nourishing weeknight dinner or a delightful brunch with friends.

Ingredients

  • 1 cup fava beans
  • 2 tablespoons olive oil
  • 1 clove garlic
  • 1 teaspoon cumin
  • 1 teaspoon lemon juice
  • 1 pinch salt
  • 1 pinch black pepper
  • 2 tablespoons fresh parsley

Method

    If using dried fava beans, soak them overnight in water. If using canned, drain and rinse them.

    In a pot, add the soaked fava beans and cover with water. Bring to a boil, then reduce heat and simmer for about 30 minutes until tender. If using canned beans, skip this step.

    Once the beans are cooked, drain them (if soaked) and transfer to a mixing bowl.

    Add olive oil, minced garlic, cumin, lemon juice, salt, and pepper to the beans. Mash gently with a fork to combine but leave some beans whole for texture.

    Taste and adjust seasoning if necessary. You can add more lemon juice or spices according to your preference.
