Experience the heart of West African cuisine with this comforting fufu, made from cassava and plantains, perfect for scooping up your favorite stews. Ideal for a cozy weeknight dinner or a festive gathering with friends.
IngredientsWhat you need
- 2 cups cassava
- 1 cup plantain
- 3 cups water
- 1 pinch salt
- 1 tbsp palm oil
Method
- 1
In a large pot, bring the water to a boil.
- 2
Add the cassava and plantain to the boiling water. Cook for about 20 minutes, or until both are soft.
- 3
Once cooked, drain the cassava and plantain and let them cool slightly.
- 4
Using a mortar and pestle, or a sturdy bowl and a masher, pound the cassava and plantain together until smooth and stretchy. This may take several minutes.
- 5
Add a pinch of salt while pounding for taste. Continue until the mixture is uniform and has a dough-like consistency.
- 6
Shape the fufu into balls or a smooth mound. If desired, drizzle with palm oil before serving.
- 7
Serve warm with your favorite soup or stew, such as groundnut soup or light soup.
