Savor the comforting flavors of this hearty frittata, packed with vibrant spinach, creamy cheese, and tender potatoes. Ideal for a cozy weekend brunch or a quick weeknight dinner that brings everyone together.

Ingredients

  • 6 large eggs
  • 1 cup spinach
  • 1 cup cooked potatoes
  • 1 cup cheese
  • 1 medium onion
  • 1 tablespoon olive oil
  • to taste salt
  • to taste black pepper

Method

  1. 1

Preheat your oven to 180°C (350°F).

  2. 2

In a large bowl, whisk together the eggs, salt, and black pepper until well combined.

  3. 3

In a non-stick oven-safe skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes.

  4. 4

Add the diced cooked potatoes and spinach to the skillet, stirring for another 2-3 minutes until the spinach wilts.

  5. 5

Pour the egg mixture over the vegetables in the skillet, then sprinkle the grated cheese evenly on top.

  6. 6

Cook on the stove for about 5 minutes until the edges start to set, then transfer the skillet to the preheated oven.

  7. 7

Bake for 10-15 minutes, or until the frittata is fully set and the top is slightly golden.

  8. 8

Remove from the oven, let cool for a few minutes, then slice and serve warm.
