Indulge in the crispy perfection of homemade frites, a classic Belgian treat. Golden-brown and fluffy on the inside, these fries are perfect for sharing at a casual gathering or as a comforting side dish any night of the week.

- 1 kg potatoes
- 1 liter beef tallow or vegetable oil
- 1 teaspoon salt
- 1 teaspoon vinegar
- 1 liter water
Method

Peel the potatoes and cut them into thick strips, about 1 cm wide.

Soak the potato strips in cold water mixed with a teaspoon of vinegar for at least 30 minutes to remove excess starch.

Drain and rinse the potatoes under cold water, then pat them dry with a clean towel.

In a large pot, heat the beef tallow or vegetable oil to 160°C (320°F). Fry the potatoes in small batches for about 5-6 minutes until they are soft but not browned. Remove and drain on paper towels.

Increase the oil temperature to 190°C (375°F). Fry the potatoes again in small batches for about 2-3 minutes until they are golden and crispy. Drain again on paper towels.

Sprinkle the fried frites with salt while they are still hot.

Serve immediately with your choice of dips such as mayonnaise or ketchup.
