Warm your soul with this classic French Onion Soup, featuring caramelized onions simmered in rich beef stock, topped with crusty French bread and melted gruyère. Ideal for cozy weeknight dinners or elegant gatherings.

Ingredients

  • 4 large yellow onions
  • 2 tablespoons unsalted butter
  • 1 teaspoon granulated sugar
  • 4 cups beef stock
  • 1 teaspoon fresh thyme
  • 1 cup French bread
  • 1 cup gruyère cheese
  • salt and pepper to taste seasoning

Method

  1. 1

Melt butter in a large pot over medium heat. Add sliced onions and sugar, stirring occasionally.

  2. 2

Cook onions for about 10 minutes until they become caramelized and golden brown.

  3. 3

Add thyme, and season with salt and pepper. Pour in beef stock and bring to a simmer.

  4. 4

Simmer for about 5 minutes to allow flavors to meld.

  5. 5

While the soup simmers, preheat the broiler in your oven.

  6. 6

Ladle the soup into oven-safe bowls, top with sliced bread and shredded cheese.

  7. 7

Place bowls under the broiler for 3-5 minutes until the cheese is bubbly and golden.

  8. 8

Serve the soup hot, garnished with additional thyme if desired.
