Indulge in the sweet, fragrant layers of Foi Thong, a traditional Thai dessert made with mung bean flour, coconut milk, and pandan extract. Perfect for festive occasions or a delightful treat after dinner.

Ingredients

  • 200 g mung bean flour
  • 200 g sugar
  • 300 ml coconut milk
  • 1 tsp salt
  • 2 tsp pandan extract
  • 1 tsp food coloring
  • 100 g sliced coconut

Method

  1. 1

In a mixing bowl, combine mung bean flour, sugar, salt, and pandan extract.

  2. 2

Gradually add coconut milk to the dry mixture while stirring until smooth.

  3. 3

Transfer the mixture to a saucepan and cook over low heat, stirring constantly until it thickens.

  4. 4

Once thickened, pour the mixture into a lined tray and spread it evenly. Let it cool.

  5. 5

Once cooled, cut the set mixture into thin strips resembling 'golden threads'.

  6. 6

Optionally, dye some strips with food coloring for decoration.

  7. 7

Serve the Foi Thong on a platter and garnish with sliced coconut.
