- 500 g beef tripe
- 2 liters beef broth
- 1 medium onion
- 2 cloves garlic
- 1 tbsp vegetable oil
- 1 tsp paprika
- 1 tsp marjoram

In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.

Add the minced garlic and paprika to the pot and cook for 1-2 minutes until fragrant.

Incorporate the cleaned and sliced beef tripe into the pot and stir well to combine with the onions and garlic.

Pour in the beef broth and bring the mixture to a boil. Reduce the heat to a simmer.

Season with marjoram, salt, and pepper. Cover and let simmer for about 1-2 hours, or until the tripe is tender.

Taste the broth and adjust seasoning if necessary before serving.
