Indulge in the creamy sweetness of Firni, a traditional Indian rice pudding infused with fragrant cardamom and rose water, topped with crunchy almonds and pistachios. Perfect for festive occasions or a cozy weeknight dessert.

Ingredients

  • 1 cup basmati rice
  • 4 cups milk
  • 1/2 cup sugar
  • 1 teaspoon cardamom powder
  • 1/4 cup chopped almonds
  • 1/4 cup chopped pistachios
  • 1 teaspoon rose water

Method

    Rinse and soak the basmati rice in water for about 3 hours. Drain and set aside.

    In a pot, bring the milk to a boil over medium heat. Stir occasionally to prevent burning.

    Add the soaked and drained basmati rice to the boiling milk. Cook on low heat, stirring frequently, until the rice is soft (about 20 minutes).

    Stir in the sugar and cardamom powder. Continue to cook for another 5 minutes until the mixture thickens.

    Remove from heat and add rose water if using. Mix well.

    Pour the firni into serving bowls. Let it cool to room temperature, then refrigerate for at least 2 hours until set.

    Garnish with chopped almonds and pistachios before serving.
