Indulge in the warm, sweet embrace of Filhós, a traditional Portuguese treat made with fluffy dough, cinnamon, and a hint of olive oil. Perfect for festive gatherings or cozy weekend breakfasts!

- 500 g all-purpose flour
- 1 cup water
- 20 g fresh yeast
- 100 g sugar
- 1 tbsp olive oil
- 1 tsp salt
- 1 tbsp cinnamon
- 1 liter vegetable oil

In a bowl, dissolve the fresh yeast in warm water with a pinch of sugar. Let it activate for about 10 minutes until frothy.

In a large mixing bowl, combine the flour, sugar, and salt. Mix well.

Add the activated yeast mixture and olive oil to the flour mixture. Mix until a dough forms.

Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Cover with a damp cloth and let it rise for 1 hour or until doubled in size.

Once the dough has risen, punch it down, and roll it out to about 0.5 cm thick. Cut into diamond or square shapes.

Heat vegetable oil in a deep pot over medium heat. Fry the dough pieces until golden brown on both sides, then remove and drain on paper towels.
