Brighten your day with this vibrant Feta & Beetroot Salad, featuring earthy beets, creamy feta, and a zesty honey-mustard dressing. Ideal for a refreshing weeknight dinner or a delightful brunch with friends.

- 200 g baby spinach leaves
- 500 g cooked beetroot
- 1 bunch spring onions
- 2 pieces red chilli, halved, deseeded and finely sliced
- 1 tbsp olive oil
- 1 tbsp honey
- 1 tbsp lemon juice
- 1 tbsp mustard
- 1 bunch mint
- 400 grams Feta cheese, crumbed
Method

Scatter the spinach leaves onto a large platter.

Slice the beetroot into wedges and arrange on top of the spinach.

Scatter over the feta, mint, spring onions and chilies.

To make the dressing, combine the olive oil, honey, lemon juice, and mustard in a glass jar with a lid. Season and shake well.

When ready to serve, pour the dressing over the salad and toss lightly to combine.
