Savor the rich flavors of Fatta, a hearty Middle Eastern dish featuring tender beef or lamb layered with fragrant rice, garlic, and a tangy tomato sauce. Perfect for a cozy family dinner or a festive gathering.

Ingredients

  • 2 cups rice
  • 1 kg beef or lamb
  • 1 large onion
  • 4 cloves garlic
  • 4 cups water
  • 1 cup pita bread
  • 1 cup tomato sauce
  • 2 tablespoons vinegar
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Method

    In a large pot, add the beef or lamb chunks and cover them with water. Bring to a boil, then reduce heat to low and simmer for about 45 minutes until the meat is tender.

    While the meat is cooking, rinse the rice under cold water until the water runs clear. In a separate pot, cook the rice according to package instructions, using the broth from the meat for added flavor.

    In a frying pan, heat a bit of oil and sauté the chopped onion until translucent. Add the minced garlic and cook for another minute until fragrant.

    Once the meat is tender, remove it from the pot and strain the broth. Set the meat aside and keep the broth for the next steps.

    In the same pot, add the strained broth, the tomato sauce, vinegar, cumin, salt, and black pepper. Bring to a boil and let it simmer for about 10 minutes.

    Fry the pieces of pita bread in a little oil until golden brown and crispy. Set aside on paper towels to drain excess oil.

    To assemble the Fatta, layer the fried pita pieces at the bottom of a serving dish, add the cooked rice on top, and then layer the meat followed by the sauce mixture.

    Serve warm, garnished with the sautéed onions and garlic if desired. Enjoy your Fatta!
