Savor the vibrant flavors of Middle Eastern cuisine with these crispy, golden falafels made from chickpeas, fresh herbs, and aromatic spices. Perfect for a weeknight dinner or a festive gathering, serve them with tahini sauce and pita!

Ingredients

  • 1 cup dried chickpeas
  • 1 small onion
  • 2 cloves garlic
  • 1 bunch fresh parsley
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon baking powder
  • Salt to taste salt
  • Oil for frying vegetable oil

Method

  1. 1

Drain and rinse the soaked chickpeas. Place them in a food processor.

  2. 2

Add chopped onion, minced garlic, parsley, cumin, coriander, baking powder, and salt to the food processor.

  3. 3

Pulse the mixture until it's coarse and well blended, but not pureed.

  4. 4

Transfer the mixture to a bowl, cover, and refrigerate for at least 30 minutes.

  5. 5

Heat vegetable oil in a deep frying pan over medium heat.

  6. 6

Shape the chilled mixture into small balls or patties and carefully place them in the hot oil.

  7. 7

Fry until golden brown on all sides, about 3-5 minutes per batch.

  8. 8

Remove from oil and drain on paper towels. Serve warm with tahini sauce or in pita bread.
