Ingredients

  • 1 cup red lentils
  • 1 medium onion
  • 1 medium carrot
  • 1 clove garlic
  • 1 tablespoon rice
  • 2 tablespoons olive oil
  • 1 liter vegetable broth
  • 1 teaspoon red pepper flakes
  • 1 teaspoon mint

Method

    In a large pot, heat the olive oil over medium heat.

    Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and grated carrot; cook for another 2-3 minutes.

    Add the rinsed red lentils and optional rice, then pour in the vegetable broth.

    Season with red pepper flakes, and bring the mixture to a boil.
