- 100 g sugar
- 25 g fresh yeast
- 300 ml water
- 200 g pork lard
- powdered sugar to taste for dusting

Dissolve the fresh yeast in lukewarm water and let it sit for about 5 minutes until frothy.

In a large mixing bowl, combine the sifted flour and sugar. Make a well in the center and pour in the yeast mixture.

Mix the ingredients until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

Form the dough into a ball, place it in a lightly greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Once risen, roll out the dough into a large rectangle. Brush the surface with melted pork lard and roll it up tightly to form a long log.

Twist the log into a spiral shape and place it on a baking sheet lined with parchment paper. Let it rise again for about 30 minutes.

Preheat your oven to 180°C (350°F). Bake the ensaimada for about 30 minutes or until golden brown.
