Savor the warmth of homemade empanadas, filled with seasoned ground beef, onions, and potatoes, all encased in a flaky crust. Ideal for a cozy weeknight dinner or a festive gathering with friends.
IngredientsWhat you need
- 2 cups all-purpose flour
- 1/2 cup butter
- 1/2 cup water
- 1 tsp salt
- 1 cup ground beef
- 1/2 cup onion
- 1/4 cup potatoes
- 1 tsp cumin
Method
- 1
In a large bowl, combine the flour and salt. Add the diced cold butter and mix until the mixture resembles coarse crumbs.
- 2
Gradually add the cold water to the flour mixture while mixing until a dough forms. Knead lightly and cover with plastic wrap. Let it rest for 15 minutes.
- 3
In a skillet over medium heat, cook the ground beef with the chopped onions until the beef is browned and the onions are translucent. Stir in the mashed potatoes and cumin. Remove from heat and let cool.
- 4
Preheat oil in a deep frying pan over medium heat for frying the empanadas.
- 5
Roll out the rested dough on a floured surface to about 1/8 inch thickness. Cut out circles using a round cutter or a glass.
- 6
Place a spoonful of the beef mixture in the center of each circle. Fold the dough over to create a half-moon shape. Press the edges to seal and crimp with a fork.
- 7
Carefully place the empanadas in the hot oil and fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
- 8
Serve hot with spicy sauce or ají.
