Savor the taste of Latin America with these golden-brown empanadas filled with spiced ground beef, sweet red bell pepper, and a hint of paprika. Perfect for a cozy weeknight dinner or a festive gathering with friends.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter
  • 1/4 cup ice water
  • 1 medium onion
  • 1 cup ground beef
  • 1 medium red bell pepper
  • 2 tablespoons tomato sauce
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 egg beaten

Method

    In a large bowl, mix flour and salt. Cut in the butter until the mixture resembles coarse crumbs.

    Add ice water, a tablespoon at a time, mixing until the dough comes together. Form into a disc, wrap in plastic, and refrigerate for 30 minutes.

    In a skillet, heat a little oil over medium heat. Sauté onion and bell pepper until softened, about 5 minutes.

    Add ground beef, cooking until browned. Stir in tomato sauce, paprika, and salt. Cook for another 5 minutes. Remove from heat and let cool.

    Preheat your oven to 375°F (190°C). Roll out the chilled dough on a floured surface to about 1/8 inch thick.

    Cut out circles of dough, fill half with the meat mixture, fold over and seal the edges. Brush with beaten egg.
